Dutch junk food has royal origins

The ‘kroket’ (‘croquet’ of ‘croquette’, yes it’s a French word) actually has royal beginnings, according to top Dutch food critic Johannes van Dam in ‘Het volkomen krokettenboek’ (roughly ‘The comprehensive kroket book’), which will be published this fall. “It is nonsense to say that the kroket is made of meat leftovers,” Van Dam explains. According to his research, the recipe is from 1691 attributed to French chef Francois Massialot who made krokets out of delicacies such as truffles, mushrooms and cream cheese for King Louis XIV.

Crazy new restaurant concept

freud restaurant

Not yet listed in the Iens or Special Bite restaurant guides, the mayor of Amsterdam Job Cohen opened and waited on tables yesterday at a new Amsterdam restaurant called Freud. Why the brouhaha? The restaurant, founded by psychologist Renske Kastelein and cooking instructor Gerda Hahn, is run by people with psychiatric problems. Their slogan translates to “Insanely delicious food”. “The staff here can’t get a job anywhere, but they function just fine, which is what they can prove here”, Hahn explains.

Gouda from the Sahara

In September, the first ever cheeses from a new cheesemaker in the Moroccan town of Jerada, located in the middle of the Sahara desert, will be made and sold. Company owner Montassir Menouar completed his training in the Netherlands in Stolwijk, South Holland. The project, back by an association called Human Force, wants to help increase work perpectives in North Eastern Morocco. On April 19, Menouar will be saying good-bye to his teachers in the presence of the Ambassador of Morocco.

I think I saw bits of this on TV5 (Francophone television – Mr Menouar speaks French). Mr Menouar said he thought learning such a trade would help him provide for his family.

No conviction for self-proclaimed chocolate criminal

Filed under: Food & Drink,Sustainability by Branko Collin @ 12:17 am

tony_chocolonely.jpgOn Thursday the criminal court in Amsterdam threw out a case against reporter Teun van de Keuken for complicity in slavery. Van de Keuken, who co-hosts a consumer advocacy show on TV called ‘Keuringsdienst van Waarde’ (a pun referring to the Dutch Food and Drug Administration), instigated the case against himself after eating a number of chocolate bars that he claimed were produced by slaves. During the case, the court heard testimony of a former slave who was forced to work on a cocoa plantation when he was a child.

The case was dismissed on technical grounds, since Van de Keuken himself was not a harmed party, and therefore could not initiate the prosecution against himself. Van de Keuken is now contemplating a civil suit.

Van de Keuken started his own guaranteed slave-free chocolate brand two years ago called Tony’s Chocolonely, using cocoa produced by Ghana’s Kuapa Kokoo co-op. The chocolate bars were made in co-operation with Dutch fair trade company Max Havelaar.

Earlier this year, Van de Keuken was sued unsuccessfully by chocolate importer Bellissimo Foods, who claimed that it is impossible to produce slave-free chocolate. Irony is dead.

Today was the first edition of National Pancake Day in the Ouwehands Dierenpark Rhenen. More than 20 cooks made thousands of pancakes for thousands of visitors, especially children. The Nationale Pannenkoekendag was organised by Tefal, in honour of the 40th year anniversary of the pan manufacturer. Tefal’s goal is to hold a National Pancake Day every fourth Saturday in March. According to Tefal, England, Ireland and Australia have been celebrating Pancake Day for centuries.

Well, the Russians have a very old tradition called Maslenitsa, which involves a whole week of pancake eating in February, with lots of real butter.

Food that tastes like less

Scientists in Wageningen are developing a new generation of foods that can help prevent obesity by getting people to eat less. The Top Institute Food and Nutrition is also developing food ingredients which can stop obese people from developing diabetes. Such nutrients could eventually be used in any kind of food. The Dutch public health agency concluded in a research report last year that 25% of deaths and serious illness caused by overweight and obesity would be avoided if adults shed 3 kg.

Eating right and exercising is pretty straight forward, but accommodating the obese seems more lucrative. As the article states, “such innovative products have higher margins than those of selling a tomato or a bottle of milk.”
